Italian Prawns

Ingredients
1 lb. frozen prawns (shrimp)1 can chopped tomatoes
1 onion1 dash salt and pepper
1 green pepper1 tsp. mixed herbs
1/4 cucumber1 tsp. sugar
1/4 lb. mushrooms1 cup grated Cheddar cheese
Directions

Chop and fry onions and peppers in oil until soft. Add cucumbers and mushrooms and fry for a bit. Add herbs, sugar, salt and pepper. Add tomatoes, bring to boil and simmer for 4 minutes. Add frozen shrimp and cook for a further 4 minutes. Grate cheese over top or serve cheese separately. Serve with rice or baked potatoes.
