Peanut dressing | 2 cups shredded rotisserie chicken |
1/4 cup peanut butter | Salad |
1/8 cup soy sauce | 2/3 bag slaw mix (shredded cabbage, carrot, red cabbage) |
1/8 cup toasted sesame oil | 1 mango cut in chunks |
1/8 cup rice vinegar | 1/2 yellow or red pepper, sliced into thin strips |
1 lime, zested | 1/2 cucumber, seeded and cut into cubes |
1 Tbsp. lime juice (1/2 lime) | 1/4 cup red onion, diced |
1/2 tsp. Cholula hot sauce (or to taste) | 2 green onions, thinly sliced |
2 Tbsp. honey | 1/4 cup chopped fresh cilantro (optional) |
1 tsp. grated fresh ginger | 1/2 cup thawed frozen shelled edamame |
1 garlic clove, minced | 1/2 cup chopped roasted unsalted peanuts |
Chicken | peeled grated broccoli stalks, uncooked (optional) |

Directions
Mix dressing ingredients in a jar and shake until thoroughly mixed. Add other ingredients to a large bowl (serve chicken on side if you want), pour over 1/2 dressing and toss to combine. Add more dressing to individual servings as desired. Note: original recipe called for 1 Tbsp. sriracha in dressing, but Cholula is what I have.
