Ingredients
8 Tbsp. (115 g.) unsalted butter, softened1-2/3 cups (235 g.) all-purpose flour
1 cup (200 g.) sugar1 tsp. baking powder
1/4 cup (50 g.) brown sugar1/2 tsp. baking soda
1/2 tsp. salt (see note)1-1/2 tsp. ground ginger
3 large eggs, room temperature 1-1/2 tsp. nutmeg
1/4 cup oil (I use coconut)1 tsp. cinnamon
1-1/3 cups (310 g.) pumpkin puree1 tsp. cloves
Directions

Preheat oven to 375 degrees. In large bowl stir butter, sugars, and salt until combined. Whisk in eggs one at a time until combined, then whisk in oil and pumpkin. To flour add baking powder, baking soda, ginger, nutmeg, cinnamon, and cloves, stirring until combined, then add to wet ingredients. Scoop batter into muffin cups and bake until firm, 18-22 minutes. Let cool. Note: if using salted butter, add 1/4 tsp. salt instead of 1/2 tsp.
