Ingredients
3 cans kidney beans2 large potatoes, peeled and diced
1 cup broth4 tsp. chopped cilantro
1 chayote squash, diced1 small onion, diced
1/2 carrot, peeled and diced2 cloves garlic, minced
1 red, orange or yellow pepper, dicedsalt and pepper to taste
Directions

Place beans in large pot with broth. Add water if necessary to cover beans. Bring to boil and cook 25 minutes. Add rest of ingredients and cook another 25 minutes. Salt to taste. Serve with tortillas or rice.
