| Greek Salad Alexandra Cooks | |

| 3 tbsp lemon juice | 2 cups shredded radicchio (red cabbage) |
| 2 tbsp red wine vinegar | 1 cup halved cherry tomatoes |
| 1 tbsp dijon mustard | 1/2 cup thinly sliced red onion |
| 1 tsp oregano | 1-1/2 cups diced cucumber |
| 3/4 tsp kosher salt | 1 red bell pepper, diced |
| 1 clove garlic, minced | 1/4 cup thinly sliced pepperoncini |
| 1 cup oil | 2 cups chickpeas |
| 2 cups shredded romaine lettuce | |

Directions
Whisk together lemon juice, red wine vinegar, mustard, oregano, salt, garlic and olive oil to make dressing and set aside. Toss everything else together and dress with ~1/2 cup of homemade dressing, and season with salt and pepper.
