Ingredients
3 tbsp lemon juice2 cups shredded radicchio (red cabbage)
2 tbsp red wine vinegar1 cup halved cherry tomatoes
1 tbsp dijon mustard1/2 cup thinly sliced red onion
1 tsp oregano1-1/2 cups diced cucumber
3/4 tsp kosher salt1 red bell pepper, diced
1 clove garlic, minced1/4 cup thinly sliced pepperoncini
1 cup oil2 cups chickpeas
2 cups shredded romaine lettuce
Directions

Whisk together lemon juice, red wine vinegar, mustard, oregano, salt, garlic and olive oil to make dressing and set aside. Toss everything else together and dress with ~1/2 cup of homemade dressing, and season with salt and pepper.
