Ingredients
2-1/2 lbs boneless chicken thighs1/2 tsp cayenne pepper
2 tbsp plain yogurt1/2 tsp turmeric
1/2 lemon, juiced1/2 tsp cumin
1 red onion, thin long strips1/4 tsp cardamom
1-1/2 tbsp garlic powder1/2 tsp cinnamon
1 tbsp smoked paprika1 tbsp thyme
Directions

Add chicken to a large mixing bowl with 2-3tbsp olive oil and generous amounts of salt and pepper. Add yogurt, lemon juice, spices, and onion. Best if left to marinate overnight in the fridge, but okay to throw right in the oven. Preheat oven to 425 and slop chicken mixture into tight bread loaf pan so it's just a solid brick of chicken. Cook for 45-55mins, then remove and cut into strips for use in other recipes!
