Apple Puffs

Ingredients
1 sheet puff pastry
1 egg yolk (optional)
1/2 stick softened butter (50 g.)
1 tsp. cinnamon
30 grams brown sugar (about 2 Tbsp.)
2 apples, peeled, cored, grated and juice squeezed out
Directions

Mix filling and spread over pastry. Roll up, flatten slightly, and cut into triangles. Place on sheet pan covered with parchment paper. Brush with beaten egg yolk if using (makes them shiny). Bake for 20-25 minutes until golden brown.
