Perfect Chocolate Chip Cookies

Ingredients
2-1/4 cups flour2/3 cup firmly packed light brown sugar
1 tsp baking soda1-1/2 eggs (1 white and 2 yolks)
1 tsp salt2 tsp vanilla extract
1 cup unsalted butter3/4 lb semisweet chocolate, chopped into 1/2inch chunks
2/3 cup granulated sugar
Directions

Preheat oven to 350. Line a baking sheet with parchment paper. In a bowl, sift together flour, baking soda and salt. Set aside. In new bowl, beat butter and sugars at medium velocity until light and fluffy. Reduce speed to low and add egg, then egg yolks and vanilla. Beat until combined, about 1 minute. Add flour mixture and mix on slow until flour disappears. Fold in chocolate by hand. Divide the dough into rounded tablespoons on the baking sheet, spacing about 1" apart. Bake until golden brown, ~8-10mins. Let cool on wire rack.
