Split Pea Soup with Ham

Ingredients
16 oz. pkg green split peas, no soak kind2 large carrots, chopped
2 tsp. olive oil8 cups chicken broth
1 onion, chopped1 large or 2 small smoked ham hocks, or 8 oz. cooked ham
2 cloves garlic, chopped salt and pepper
Directions

Wash peas and drain. In large soup pot sauté onions and garlic in oil until soft, around 5 minutes. Add peas, carrots, ham hocks and chicken broth, cover and bring to a boil. Add salt and pepper to taste. Reduce heat and simmer about 2 hours, until peas are soft and thickened. Remove ham hock, discard bone and skin, and serve soup with ham.
