Chicken Salad with Pine nuts

Ingredients
3 oz. pine nuts
2 Tbsp. olive oil
1 Tbsp. white wine vinegar
1-1/2 cups rotisserie chicken, cubed
6 oz. jarred red roasted peppers
4 cups mixed salad greens
Directions

Toast pine nuts in heavy skillet over medium heat until golden brown, about 3 minutes, and set aside. Whisk together oil and vinegar in salad bowl; add chicken, peppers, and pine nuts. Toss to mix, then add greens and mix again.
