Broccoli Cheddar Soup

Ingredients
1 white onion, chopped1 cup milk
1 medium carrot, chopped1/4 tsp. kosher salt
1 celery stalk, choppedblack pepper
2 cloves garlic, minced6 cups broccoli florets (425 g.)
2 Tbsp. butter2 Tbsp. grated parmesan cheese
3 Tbsp. flour1-1/4 cups grated cheddar
3 cups chicken broth
Directions

In a large pot, melt butter; add chopped vegetables, salt and pepper and sauté on low about 5 minutes, until soft. Stir in flour and cook for 2 minutes to remove raw flour taste. Gradually whisk in chicken broth. Add milk and bring to boil. Add broccoli and parmesan cheese and stir well. Adjust salt and pepper to taste. Cook uncovered over low heat until broccoli is cooked, about 10 minutes. Use an immersion blender to blend part of the soup, to help thicken. Gently stir in cheddar cheese. Serve garnished with additional cheddar cheese, if desired.
