Mediterranean Garlic Shrimp

Ingredients
10 oz peeled frozen shrimp2 tbsp chopped cilantro
2 red/orange bell peppers, rough chopped into 1inch chunks1 tbsp sherry vinegar
1 cup uncooked rice1/2 tsp red pepper flakes
1 tbsp tomato paste1 lemon
3 cloves minced garlic1-1/2 cup water
Directions

Heat oil in a medium frying pan over medium-high heat and add peppers and rice. Season with salt and pepper and cook until vegetables soften, about 1-2 minutes. Add tomato paste and mix well. Add water and bring to boil. Reduce heat to simmer, cover and cook 15 minutes. Meanwhile in a small bowl stir together garlic, cilantro, vinegar, red pepper flakes and 2 tbsp avocado oil. Rinse and dry shrimp. Heat oil in a large frying pan over medium-high heat and add shrimp, seasoning with salt, lemon juice and oregano. Cook, turning once, until barely pink and almost cooked through, about 1 minute per side. Stir in garlic sauce and cook about 1 minute more to finish cooking shrimp. Plate the rice and add shrimp with sauce as desired.
