Scallion Noodles

Ingredients
2 green onions, chopped1 tsp dried ginger
1/2 cup oil (vegetable / olive)1/2 onion, sliced long and thin
1 lb lo mein noodles (half the box)1 cup baby carrots, halved down the length
1/4 cup soy sauce1 head broccoli
1-1/2 tsp brown sugar
Directions

Fill wok w/ oil and simmer onion, carrots, broccoli and ginger along with half the green onions over medium low heat for ~10 mins (stop just before scallions start to brown). Boil water in separate pot and cook lo mein noodles, then drain and dump into wok w/ scallion oil. Reduce heat and add soy sauce and brown sugar. Mix well for about 30 seconds, plate and add additional uncooked scallions for garnish.
