Zucchini Tomato Couscous

Ingredients
2-1/2 cups pearl (israeli) couscous1 tsp cumin
3 zucchini (cubed)1/2 tsp cayenne
4 cloves garlic, rough chopped1 large can whole tomatoes (crushed by hand)
2 tbsp tomato paste2-1/2 cups water
2 tsp cinnamon1/2 tsp smoked paprika
Directions

Preheat a heavy pot with a tight-fitting lid over medium heat. Add couscous and stir until golden and fragrant, about 3 mins. Transfer to bowl and set aside. Oil the pot and increase heat. Add zucchini, 1/2 tsp salt and a dash of pepper. Stir and cook for about 8-10mins. Add garlic and stir until fragrant. Add tomato paste, cinnamon, cumin, cayenne, and another 1/2 tsp salt and cook for 1 minute. Add toasted couscous, canned tomato and water. Cover, reduce heat to low and simmer for 8-12 minutes or until couscous is fully saturated. Remove from heat, add paprika and another additional whole cup of water to thin out the sauce, and let cool for 2-3mins before serving with crackers or garlic bread. PS- adding ingredients one after the other without paying any attention to cooking duration also works. :P
