Ingredients
8 oz. lo mein noodles1/2 large onion, sliced thin
3 Tbsp. soy sauce2 cups slice crimini mushrooms
2 tsp. sesame oil1 cup red pepper, sliced thin
2 Tbsp. water1 cup matchstick carrots
1 tsp. rice vinegar3 garlic cloves, minced
1 tsp. honey1/2 tsp. dried ginger
1 tsp. brown sugar2 cups shredded cabbage (optional)
1 tsp. hot sauce1 cup snow peas, halved or thirded
1 Tbsp. oyster sauce1 cup chopped celery
1/8 tsp. pepper4 green onions
Directions

Cook noodles and set aside. Make sauce by combining soy sauce, sesame oil, water, vinegar, honey, sugar, hot sauce, oyster sauce, and pepper. Set aside. In a wok with some oil stir fry the onion, mushrooms, pepper and carrots, 3-4 minutes. Add garlic and ginger and cook until fragrant, 1 minute. Add cabbage, celery and snow peas and cook a further 3-4 minutes, until crisp-tender. Add noodles and sauce (you might want to transfer to large pot first if you don't have room in the wok). Mix well, and garnish with green onions. Return to wok for maximum presentation points. :)
