Peanut Chicken Traybake

Ingredients
2 lbs. boneless chicken thighs, thinly sliced1 tsp. kosher salt
1 cup rice2 heads broccoli, cut into florets
4 Tbsp. olive oil1 red onion, cut in small wedges
4 Tbsp. honey3 Tbsp. chopped peanuts
5 Tbsp. green curry paste (90 g.)1 handful roughly chopped cilantro
5 Tbsp. peanut butter (80 g.)1 lime
Directions

Preheat the oven to 400, or 415 if your oven is unreliable like ours. Cook the rice. Put chicken in large bowl and add oil, honey, curry paste, peanut butter and salt, mixing together with your fingers. Put chicken onto an oiled sheet pan, add the broccoli and onion and bake for 30 minutes, stirring halfway through (or not). Top with cilantro, chopped peanuts and a squeeze of lime. Serve with warm naan bread.
