Ingredients
Salmon or cod or other firm, flaky fish, 6 oz. per person1/2 cup onion, chopped
1 lemon, zested then sliced1 kosher salt
4 Tbsp. butter, softened not melted1 black pepper
2 garlic cloves, minced9 cherry tomatoes (3 per packet), halved
2 Tbsp. fresh herbs (parsley, oregano)parchment paper
Directions

Preheat oven to 425!!! Combine butter, garlic and lemon zest, mashing with a fork. Tear off 12” square pieces of baking parchment, one per person. Arrange fish portion in the center of paper. Sprinkle with salt and pepper and spread with butter mixture. Lay 2 lemon slices on top and scatter 6 tomato halves and onion around fish. Sprinkle with herbs if desired. Bring the paper up around the fish and fold together several times. Then fold in each side several times, tucking them under packet, so everything is sealed. Repeat for remaining packets. Place packets on baking sheet and bake for 15-18 minutes, until fish is cooked through and flakes easily with a fork. Serve with more lemon slices, baked potato and broccoli or asparagus. If you are roasting the asparagus, cut the spears in half, toss them with olive oil and salt, and add them to the same roasting pan for the last 10 minutes of cooking time.
