Sesame Chicken

Ingredients
1/2 cup chicken broth2 lbs boneless skinless chicken breasts (1in cubes)
1/3 cup honey1/4 tsp pepper
1/4 cup soy sauce2 tsp olive oil, divided
1 tbsp sesame oil1/2 red bell pepper, diced
2 tsp rice vinegar1/2 green bell pepper, diced
3 tbsp cornstarch, divided1 medium yellow onion, diced
2 tsp toasted sesame seeds3 cups cooked rice
2 garlic cloves, grated4 green onions, sliced
2 egg whites
Directions

Cook rice and set aside. In a mixing bowl, combine; chicken broth, honey, soy sauce, rice vinegar, sesame oil, 1tbsp cornstarch, garlic and sesame seeds. Whisk until combined and set aside. In a large bowl beat egg whites until frothy. Whisk in 2tbsp cornstarch, kosher salt and pepper. Add in the diced chicken and use tongs to toss and combine. Oil a large 12in non-stick skillet or wok and heat over medium-high heat. Once hot, add peppers and onions with a pinch of salt and cook for 4-5 minutes until slightly softened, and set aside. In the same skillet heat 1tsp olive oil over medium-high heat. Add half the chicken and cook for 5-8 minutes until golden and fully cooked. Repeat for other half with another tsp of oil. Return the peppers and onions to the skillet and pour in the sesame sauce. Bring to a bubble and simmer until thickened. Stir and serve over rice. Sprinkle with extra sesame seeds and sliced green onions.
