Ingredients
1 small can corn (drained)
1 can black beans (rinsed and drained)1/3 cup olive oil
1 can black-eyed peas (ditto)1/3 cup lime juice (about 2 limes)
1 heaping cup cherry tomatoes, halved1 Tbsp. Cholula hot sauce
1 cup diced onion1/2 tsp. cumin
1 cup diced baby peppers (orange)1 tsp. kosher salt
Directions

Make the dressing: whisk olive oil, lime juice, hot sauce, cumin and salt together and put aside. In a big bowl stir together the veggies, mix in the dressing and let marinate a few minutes or until everything else is ready. Serve with Taco Salad or use as appetizer served with tortilla chips.
