Ingredients
1 banana1-1/2 cup flour (180 g.)
1 stick butter, softened1 tsp. baking soda
3/4 cup sugar (150 g.)1/8 tsp. salt
1 egg plus milk to make 1 cup1/2 cup chopped walnuts
1-1/2 tsp. vanilla1/4 cup dried cranberries
Directions

Measure out milk and egg and let sit to reach room temperature. Cream together the butter and sugar with a fork and mix in mashed banana. Whisk in milk with egg (works better if milk is room temperature); add vanilla. Whisk in flour with baking soda and salt and mix well. Stir in nuts and cranberries (or chocolate chips if you want). Pour into greased loaf pan and bake for 50 minutes or until toothpick comes out clean. Lower fat version: sub one 4 oz. container (1/2 cup) applesauce for the butter.
