Sheet Pan Chicken Fajitas

Ingredients
1-1/2 chicken breast, sliced thin, or tenderloins2 Tbsp. chili powder
10 baby peppers, cut into strips and deseeded (300 g.)2 tsp. kosher salt
1 red onion, sliced thick1/2 tsp. ground pepper
2 Tbsp. olive oil1 pkg. soft tortillas
Directions

Pre-heat oven to broil. In a small bowl mix chili powder, salt and pepper. Oil a sheet pan. Arrange peppers and onions on pan, drizzle with olive oil, and sprinkle with some of the chili powder seasoning. Broil for 10 minutes, until vegetables are tender and slightly charred. Meanwhile slice chicken breast in 1/4-inch thick slices and toss in a bowl with 1 Tbsp. olive oil and remaining seasoning. Arrange chicken pieces on top of the vegetables and broil for a further 5 minutes. Serve with warm tortillas, salsa, grated cheese and guacamole.
