Ingredients
8 oz. Pad Thai noodles1 red bell pepper, thinly sliced
2 Tbsp. lime juice (1-1/2 limes)2 cloves garlic, minced
2 Tbsp. brown sugar2 eggs, lightly whisked
1 Tbsp. fish sauce2 chicken tenderloins, thinly sliced
1 Tbsp. soy saucefreshly ground black pepper
1/4 tsp. cayenne pepper3 green onions thinly sliced on a bias
2 Tbsp. olive oil1/2 cup roasted unsalted peanuts, chopped
Directions

Soak the noodles in hot water for 10 minutes, drain, and set aside. In a small bowl whisk together the lime juice, brown sugar, fish sauce, soy sauce, and cayenne pepper; set aside. Cook peppers in oil in a nonstick pan about 4 minutes. Add garlic and cook about a minute. Add chicken breast and season with salt and pepper. Cook until done, about 4 minutes. Push vegetables and meat to one side and add egg. Scramble until just set and mix in with the rest. Add the sauce mixture and combine with the cooked noodles. Top with green onions and chopped peanuts. Serve with lime slices. Note: this can also be made with 1 lb. shrimp instead of chicken.
