Double Chocolate Muffins

Ingredients
3/4 cup sugar (150 g.)1/2 cup cocoa powder (45 g.), plus 1 Tbsp. (52 g. total)
2 large eggs1-3/4 tsp. baking powder
1/2 tsp. salt1/2 tsp. baking soda
1 cup whole milk1-1/2 cups chocolate chips, divided
1-1/2 tsp. vanilla extract1/2 cup coconut/vegetable oil
1-3/4 cups flour (245 g.)
Directions

Preheat oven. Oil a 12-cup muffin pan. In a large bowl whisk together the sugar, eggs and salt. Whisk in oil, milk, and vanilla. Add flour, cocoa, baking powder, and baking soda, and whisk until combined. Stir in 1 cup of the chocolate chips. Scoop batter into the muffin cups and sprinkle with the remaining chips. Bake until muffins are firm, about 18 minutes.
