Ingredients
4 boneless, skinless chicken breasts3 medium tomatoes, halved, cored and thinly sliced
2 Tbsp. olive oil1 red or orange bell pepper, thinly sliced
kosher salt1 green bell pepper, thinly sliced
black pepper1/2 red onion, thinly sliced
1 tsp. Italian seasoning (oregano, thyme, etc.)1 cup shredded mozzarella cheese
1 zucchini, halved and thinly sliced into half-moons
Directions

Preheat oven to 400. Place chicken on cutting board and make 5 slits in each breast, cross-wise, being careful not to cut all the way through. Arrange chicken on baking sheet covered with parchment paper. Drizzle oil over chicken and season with salt, pepper and Italian seasoning. Stuff each chicken breast with zucchini, tomato, peppers and onion. Scatter any extra vegetables around chicken. Sprinkle with mozzarella. Bake until chicken is cooked through, about 25 minutes.
