Ingredients
3 bananas (or 2 in a pinch)2 eggs
2 Tbsp. brown sugar2 cups flour (240 g.)
1 tsp. vanilla extract1 tsp. baking soda
1/2 tsp. cinnamon1/4 tsp. salt
1/2 cup butter (1 stick), softened1/2 cup chopped walnuts
1/2 cup sugar1 crumble topping
2 Tbsp. sour cream
Directions

Mash bananas with the brown sugar, vanilla and cinnamon in a paper plate with a fork. In a large bowl cream together the softened butter and 1/2 cup sugar. Stir in the sour cream; beat in the two eggs. Add the flour, baking soda and salt and stir until just combined. Add banana mixture and stir until combined. Stir in walnuts if desired. Pour batter into two prepared (greased) loaf pans and bake for 40-45 min. Cool on wire rack. To make crumb topping: in a small bowl stir together 1/4 c. flour, 1/2 tsp. cinnamon, and 1/4 c. brown sugar. Cut in 3 Tbsp. butter. Mix in 1/4 cup chopped walnuts.
