Ingredients
2 cups flour (240 g.)2 eggs
1-1/2 tsp. baking powder1-1/2 cups mashed bananas (4 bananas) (340 g.?)
1/2 tsp. baking soda3/4 cup sugar (145 g.)
1/4 tsp. salt1/2 cup butter, melted (1 stick)
1/4 tsp. cinnamon3/4 cup chopped walnuts
1/8 tsp. nutmeg
Directions

Grease 2 loaf pans. In a large mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center and set aside. In a medium bowl beat the eggs, then mix in the mashed banana (mash in a paper plate for easier cleanup), sugar, and melted butter. Add egg mixture all at once to flour mixture and stir just until moistened. Fold in nuts. Pour batter into prepared pans and bake for about 45 minutes, or until toothpick inserted near center comes out clean. Cool for 10 minutes, then run a knife around edge of each loaf and remove from pans. Let cool completely before wrapping up. Put one loaf in the freezer for later!
