Chicken Enchiladas

Ingredients
2 T. olive oil8 soft corn tortillas
1 cup chopped onion1 jar taco sauce
2 cups chopped cooked chicken8 oz. grated cheddar cheese
1 T. cumin1/4 cup chopped green pepper
1/2 tsp. cayenne pepper1/4 cup chopped tomato
1 tsp. paprika
Directions

Preheat oven to 350 and oil a large baking dish. Pour a thin layer of taco sauce to cover the bottom of the pan. Cook onions in olive oil for 10 minutes, or until soft and golden. Add cooked chicken, spices, salt and pepper to taste, and cook, stirring constantly, for 2 minutes. Wrap each tortilla with a little of the chicken mixture and some grated cheese, and roll up, placing seam side down into the pan. Top with some more taco sauce and grated cheese, sprinkle with the green pepper and tomato, and bake for 30 minutes. Serve with salad or mexican rice, and tortilla chips.
