Ingredients
8 boneless chicken thighs, cut up1 tbsp. curry powder
1/4 cup chopped onion1/2 tsp. salt
1/4 cup chopped green pepper1/2 tsp. nutmeg
1 clove garlic, minced1/4 tsp. sugar
1 tbsp. butter1/8 tsp. pepper
1 can chopped tomatoes1 tbsp. cornstarch
1/4 cup snipped parsley or other fresh herb1 tbsp. cold water
2 tbsp. golden raisins
Directions

Rinse and dry chicken. Cook onion, green pepper, and garlic in butter until tender. Remove from heat and add undrained tomatoes, parsley, raisins, curry powder, salt, nutmeg, sugar and pepper. Return to heat and bring to boiling. Add chicken pieces, turning to coat with mixture. Cover, reduce heat, and cook for 30 minutes until chicken is cooked. Push chicken to edges of pan. Mix cornstarch with water, then add to juices in pan, stirring until thickened, cooking for two minutes. Serve with rice. Can sprinkle with toasted almonds if desired.
